This 18cm Japanese-style santoku, which is shorter and straighter than a European chef's knife but just as versatile, can be used for a majority of kitchen tasks. Part of our special collection with London-based Blenheim Forge.
---DETAILS---
Located in a small workshop under an archway in South London, Blenheim Forge is a jewel in Britainâs culinary landscape, beloved by chefs like Gordon Ramsey and Francis Mallmann. We collaborated on a collection of knives made with a core Japanese super blue carbon steelâknown for its long-lasting durability and unparalleled sharpnessâclad with rust-proof stainless steel until the edge of the blade for easier maintenance. It is notoriously difficult to forge super blue carbon steel, but Blenheim Forge has mastered it with their skill and attention to detail. Every knife has a comfortable, six-sided walnut handle that feels stable to hold and provides balance, attached with a beautiful copper ferrule. The wood is sustainably sourced from fallen trees in the M25 area by an enterprise that teaches joinery and furniture making to unemployed youth.
This 18cm santoku, which refers to three key tasks in food prepâslicing, dicing and mincingâwill become the most used in your kitchen. The thin, sharp blade takes the strain off your wrist and ensures neat, precise cuts.
---BENEFITS--- âAnytime chefs walk into one of our stores, they beeline for these knives. It has what they love about carbon steelâthe extremely fine cuts, how easy it is to sharpenâbut requires less fuss.â
