The Story
A robust carbon steel madeleine pan for making 24 small, fan-shaped French cookies. ---DETAILS--- A heavy-duty carbon steel tray, the MasterClass 24 Hole Mini Madeleine Pan (21 x 27 cm) is built to last for 20+ years. Carbon steel (a 1mm layer) retains heat very well, resulting in perfectly browned cookies and resistance to warping. Two layers of PFOA-free non-stick coating helps release cookies easily (for madeleines, we recommend generously greasing the moulds so the cookies keep their distinct shape). This makes the pan easy to clean as well, at the sink or dishwasher.
