Made of 1.5mm thick French copper, an impeccable conductor of heat, it has a porcelain insert for tempering chocolate or making delicate sauces like hollandaise, which can become scrambled eggs if a pan gets too hot. (A bain marieâespecially a copper oneâprevents this.) It also lets you keep ingredients warm until serving. Suitable for all hobs except induction.
