This 20.5cm gyuto knife, which is similar in shape to a European chefâs knife, is an all-purpose blade thatâs especially well-suited to preparing meat. Part of our special collection with London-based Blenheim Forge. ---DETAILS--- Located in a small workshop under an archway in South London, Blenheim Forge is a jewel in Britainâs culinary landscape, beloved by chefs like Gordon Ramsey and Francis Mallmann. We collaborated on a collection of knives made with a core Japanese super blue carbon steelâknown for its long-lasting durability and unparalleled sharpnessâclad with rust-proof stainless steel until the edge of the blade for easier maintenance. It is notoriously difficult to forge super blue carbon steel, but Blenheim Forge has mastered it with their skill and attention to detail. Every knife has a comfortable, six-sided walnut handle that feels stable to hold and provides balance, attached with a beautiful copper ferrule. The wood is sustainably sourced from fallen trees in the M25 area by an enterprise that teaches joinery and furniture making to unemployed youth. The long and thin gyuto blade (20.5cm), which is well-suited to a rocking motion, resembles a European chefâs knife and is just as versatile. You can use it to slice meat, chop onions, julienne vegetables, and so much more.
